2 ripe bananas (4.5 to 6.0 ounces depending on size) 3 oz coconut milk (we prefer organic, the fat will cook faster in this cebu) salt, to taste (we prefer a little less than the recipe says to serve as a side dish). 1 to 2 cups cebu (we like to use a very soft cebu) 1 tsp olive oil. 1 tbsp sweet papaya (optional, it's a very rich sauce) 1/2 tsp cayenne 1/4 tsp onion powder 1/8 tsp cayenne pepper 1/8 tsp ground cumin 1/8 tsp black pepper 1/2 tsp paprika 1/2 tsp coriander powder (optional) Combine all of the ingredients in a large glass jar and store in the refrigerator. Ingredients: 1/2 cup cooked cebu (if you're using a hard cebu, you can add 1/2 cup of water if it is too hard to cook) 1/2 tsp fresh lime juice (you can leave this out if you are using a soft cebu) 2 tbsp cornstarch 1 tbsp white vinegar 3 tbsp oil 4 cloves garlic, minced 3 tbsp white sugar 1 1/2 tsp salt (I recommend 1/2 tsp because the cebu will cook very quickly in the oil, I find it's fine to leave this out) Heat up the oil in a large pot, and add in the garlic. Sauté until soft and fragrant. Add in the sugar and salt and simmer until the sugar is dissolved and the garlic is soft. Add in the papaya, lime juice, vinegar and salt. Bring to a boil, reduce to low, cover and cook on low for 10 minutes. The cebu will begin to soften. Turn the heat to high and cover again. Let the cebu cook for another 20-25 minutes.
